Dramatically set against the majestic backdrop of the Groot Drakenstein Mountains in Franschhoek ("Little French Corner"), Paarl, South Africa. Boschendal is one of the oldest wine producers in the New World with a French viticultural heritage dating back to 1685.

The farm "Bossendaal" (wood and dale) was granted in 1685 to French migrant Jean le Long by the governor of the Cape, Simon van der Stel. Le Long was one of the many Protestant Huguenots who fled from France to escape religious persecution after the revocation of the Edict of Nantes, bringing considerable winemaking skill to the region. Boschendal was the first French Huguenot wine farm established on the Cape and the second wine farm overall.

To achieve the freshness needed for making the base wine of an exceptional M�thode Cap Classique, a variety of red cultivars are chosen from Boschendal�s finest vineyards and harvested at lower sugar levels.

After the red grapes have been pressed, the juice is immediately bled from the grapes and mixed with 15% Chardonnay to create the unique sunset-salmon colour of the base wine. Before its disgorged the base wine spends 12 months on the lees, bottled under crown-cap where it undergoes secondary fermentation. The lees contact allows the wine to mature in complexity, adding a striking fruit structure and depth, as well as its alluring sparkle.
