The Franschhoek Cellar is situated at the gateway to Franschhoek � a romantic village known for its French Huguenot heritage - in one of the most scenic wine valleys in the world.

The wine estate was built in 1920 by John Winshaw, founder of Stellenbosch Farmers� Winery, but became the property of the Castle Wine and Brandy Company in 1930 when Winshaw�s winemaking business faltered.

In 1945, a group of local farmers of the Franschhoek Co-op Wine Cellar started selling their wines under the brands of Franschhoek Cellar, Franschhoek Vineyards, and La Cotte, the co-operative cellar eventually bought the derelict Castle Wine and Brandy Company building and in 1995, the co-op became Franschhoek Cellars, an independent company with 32 shareholders, and was purchased by DGB in 2008.

Top quality M�thode Cap Classique (MCC) can only be made from grapes cultivated in meticulously maintained vineyards. The grapes were harvested early at lower sugar levels to achieve an alcohol by volume of about 11% and retain the bracing freshness required for the making of a classic MCC. Handpicked in the cool of the morning, the grapes were transported in half-full bins to minimise damage.

Grapes were whole-bunch pressed separately. Only premium quality juice was used, which meant only the first 500 litres per ton were extracted for this fine wine. The juice was cold settled for 48 hours. The clear juice was then racked from the lees and fermented separately. Fermentation completed, the tank was filled and left on the primary lees up until blending. Base wines were then selected to become part of this harmonious blend. The final base wine was stabilised and filtered.

The magic of the MCC bubble transpires during the second fermentation of the wine that occurs in the bottle. Wine is then matured on the lees for 15 to 18 months. After disgorgement (removal of the lees) and dosage (addition of sugar liqueur), Boschendal Brut NV is ready to be enjoyed.
