Style Earthy & Spicy

Rich, concentrated and dense, this is a serious wine with a classic style, offering incredible dark, mineral-laced aromas of smoked earth, licquorice, pepper, wild herbs and blackcurrants to go with a firm, structured and age-worthy profile on the palate. The fleshy quality of the wine is apparent straightaway from the attack, with a solid mid-palate depth, the wine finishes with balance of fruit and warm rich tannins.          

Occultum Lapidem is latin for "hidden gem stone" but it means a "secret."  “The name refers to the estate’s best and oldest vineyard and there is so much secrecy in this excellent wine to discover.  The Occultum Lapidem vineyard is located in the Roussillon area in the south of France and when you taste the first mouthful, the wine reveals its Mediterranean identity, a mix of blacks fruits and spice, a smooth texture with a really nice concentration.  Featuring even more minerality and an additional definition after a few minutes in the glass, with ample tannins, this beauty has a long life span, and should definitely not be missed. It's superb value that will be even better in another year or so, and have 12-15 years of ultimate longevity.

This wine is definitely suited as a food wine… perfect for rich, seasonal dishes.

The vineyard is located on Gneiss and schistous soils from the Devonian Period and limestone from Kimmeridgian Period. The grapes are all hand-harvested and 100% de-stemmed. Extraction is only carried out by punching of the cap during a long maceration (at least four weeks). Half of the wine is matured in vats and the other half is aged in casks according to the vintage.


Domaine Bila-Haut is owned by the well known Rhone Valley Oenologist, Michel Chapoutier. The name refers to an old farm villa which was built high into the mountain slopes , among some old vineyards. The Domaine comprises 75 hectares of land cultivated under bio-dynamic farming techniques and is characterized by steep pebbly slopes rising from almost 150 meters above sea level. The soil has 3 components…Schiste, Gneiss and Clay, and the Grape varieties are Grenache, Carignan, and of course Syrah. The cool winters and very hot summers combined with little rain, and the drying Mistral breeze during the growing season is perfection for these varietals…in some respects better than in the Rhone Valley.


The Domaine is located in the commune of Latour-de-France…just about as close as you can be to Spain, but still be located in France, with a great deal of history related to the Knights Templar, and the Cathar movement, hence the T in the title of the Domaine shaped like the Nights Templar Cross.The wines exhibit the distinctive pepper and spice of Syrah, but are bigger and rounder in the mouth, with great complexity coming from the Carignan and Grenache. Here is A Rhone producer getting the best out of the Terroir in Lanquedoc… a superb combination! And one of the best Wine Makers in France.


The Chapoutier family have been making wine in the Rhône Valley since 1808. Michel Chapoutier took over the family business in 1990 from his Grandfather to create wines which really began to speak of their origin. Michel sees himself as a 'wine-grower, wine-maker and a wine-lover', all of which have allowed M.Chapoutier to become one of the most recognised and awarded biodynamic wine producers in the world.


A continual creator and innovator, M.Chapoutier now has vineyards around the world and his passion for great terroir took him to the Roussillon where he bought land in the village of Latour de France in 2000. It is here that incredibly old vines with low yields deliver minerality and complexity for Syrah, Grenache and Carignan as well as Grenache Blanc, Grenache Gris and Macabeo.


Domaine de Bila-Haut is farmed biodynamically and organically although it is not yet certified as such.
