The appellation was initially applied only to the village and surrounding area of Crozes-Hermitage, on account of the notoriety won by several parcels of vineyards selected as Hermitage A.O.C. (Controlled Appellation). It is now a well known wine. The soil is composed of high alluvial deposit terraces with a lot of shingles. Grapes are harvested at maturity. This Crozes-Hermitage is vinified in cement vats with a daily pumping over. Vatting lasts between 2 and 3 weeks after the alcoholic fermentation. Ageing is performed in vats. The wine will be bottled the next autumn to preserve a maximum of fruits.

The Chapoutier family have been making wine in the Rhône Valley since 1808. Michel Chapoutier took over the family business in 1990 from his Grandfather to create wines which really began to speak of their origin. Michel sees himself as a 'wine-grower, wine-maker and a wine-lover', all of which have allowed M.Chapoutier to become one of the most recognised and awarded biodynamic wine producers in the world.

A continual creator and innovator, M.Chapoutier now has vineyards around the world, but its holdings in the best sites of the Northern and Southern Rhône remain the quintessence of the range. Each site delivers the finest fruit expression of the appellations, and minimal intervention in the winery, plus strict biodynamic policy, ensures that great fruit becomes memorable wine.
