Delicious, crisp, full bodied, sharp, yet fruity gin. The botanicals used to create this fine Gin include; juniper, coriander, angelica, liquorice, orrice, orange, lemon, hops, elderflower and Bramley apple.

The story of Williams Elegant Gin begins with vodka. It is a relatively unknown fact that gin is made from vodka, but, unlike other gins, Williams Elegant is truly single-estate from field to bottle.

Often in Gin making a neutral grain spirit is simply redistilled, but at Chase, the Distillery press their organically grown cider apples from the family farm; fermenting them into cider, then distilling into Naked Chase vodka. Chase then re-distil the Naked Chase with eleven carefully considered wild botanicals and naturally pure water taken from the aquifer running underneath the cider apple orchards.

Chase is a family owned, single estate distillery, creating fine spirits since 2008 from the produce grown on their own farm in rural Herefordshire just a few miles away from Saxtys Wines HQ.

Potatoes and apples, harvested from the surrounding fields and orchards surrounding the farm are mashed up for fermentation. Apples are sweet enough to ferment naturally, but a brewer’s yeast is added to the potato mash to help it along the way.  After about a week, this becomes a low alcohol wine.

Using a bespoke, handcrafted copper batch pot, the low alcohol wine from the fermentation stage is distilled four times and then twice more in the rectification column. The column is the tallest of its kind in the world, at 70ft it rises through the roof of the barn at Chase - truly a spectaular sight!

At this point, the spirit has reached the dizzying heights of 96%abv and is well on its way to becoming Chase Vodka. After distillation, the raw spirit is tempered with water drawn from a source at the heart of the farm. Once it’s reached a much more drinkable 40% abv, the vodka is hand bottled and sealed it with a handmade cork.

The whole process, from farm to bottle, takes up to two weeks.

To make the Elegant Gin, unlike most distilleries, no ready made neutral grain spirit is used. In Chase's quest for traceability in the industry, they use either the Chase Original or Naked Chase Vodka as the base to Williams Gins.

The raw spirit at 96% is added into a 250l Carter head style still, named Ginny, along with the same amount of water from the farm. The botanicals are stuffed into a pillow case and placed into the carter head, where the flavours are infused into the vapours passing through. This method provides a very floral style with great length and depth.
