Mineral, fine and uplifting this vintage is another bony Beeste. 50% whole berry, 50% whole bunch, once again it is the bright acidity and fine tannins in the stems that lift the ripe Syrah fruit to a freshness and vitality seldom found in Swartland. The mean, slatey soils give further minerality to the palate which finishes long, broad and bright. Such a delight.

Donovan Rall is simply one of the biggest talents in South Africa! The towering talent of this itinerant winemaker impressed the team at Boutinot last year with the Vuurberg blends, and the new vintages are something else. It was only a matter of time, then, before they hand-bagged him into working on a small Boutinot South Africa project.

Crafted at Zorgvliet�s garagiste studio winery, Donovan has put together a pure Chenin and Syrah � in fact his first ever straight varietal wines.

Grown on the lower slopes of the Swartlands Kasteelberg within the growers� cattle farm. The vines are 15-25 years old and their restraint and youthful fruit also expresses the harsh, rocky mountain soils. The fruit really is selected more by the stems rather than the fruit itself � the tannins and acidity are dictated by the flavour and texture of the stems which Donovan literally chews over like a cow� or Beeste in this circumstance! Donovan hand picks the fruit by night which is then bundled into a chilled grocery fruit lorry and delivered to Zorgvliet winery where he further selects bunches for �whole bunch and stem� fermentation. The wine then goes through wild yeast fermentation over a 6 month period in old barrels. The wine is then racked off and settled, mostly into tank, for a further 4 months before being bottled unfined and unfiltered.
